Takayama is a hidden gem for enthusiasts of Japanese culture, food and drink. Sake tasting stands amongst these as one of our most recommended activities. Whether you're a seasoned sommelier or trying sake for the first time, it's an experience for all to enjoy and where better a place to do it.
The Town of Takayama has seven sake breweries, each with a history of over 100 years. One that particularly stands out is Hirata Brewery. With roots dating back to 1769, Hirata Brewery originally traded in candles and cosmetics before founding its study and production of sake in the opening days of the Meiji period, 1875. Their Motto "Sake is something that is brewed and raised" is reflected by the care they have given to brew their award winning Sake.
Upon arriving, visitors are greeted with the warm hospitality Japan is known for. Take in the traditional Japanese architecture, with its wooden beams and classic aesthetic. The tasting itself is inexpensive and there are over a dozen options to choose from.
Before diving into the Sake tasting, consider asking the staff if they have any recommendations. Perhaps ask about what makes them unique. If you have the pleasure of meeting the store manager, he may also reveal the interesting process of sake production. From the selection of the finest rice, the water taken from the Miyagawa, the fermentation and aging processes. Hirata Sake Brewery prides itself on using a mix of traditional methods and modern techniques to ensure the highest quality.
The highlight of the visit is, of course, the sake tasting. In a cosy, atmospheric tasting room, you are presented with a selection of Hirata's finest sakes. Ranging from crisp and dry to rich and full-bodied, here are just a few of my favourites:
Shoryu no Mai Junmai Daiginjo: This premium sake is likely a favourite among more experienced sake drinkers and there is no illusion as to why that is. With its delicate floral aroma and smooth, refined flavour, it is truly a representation of the excellent craftsmanship at Hirata Sake Brewery. Its subtle sweetness and clean finish make it an excellent choice for both newcomers and seasoned sake drinkers.
Hida no Hanako Junmai Ginjo: Less polished than the first Daiginjo, Junmai Ginjo offers a fragrant, refreshing and slightly sweat flavour profile. It had a slightly floral aroma and was very easy to drink. Its also recommended to those who are newer to Sake.
Takayama Junmai Daiginjo: Slightly different in name from the first, this award winning sake offers a subtle sweetness alongside a very smooth taste. It gets its smoothness again from the polishing of the rice grain, where much of the outside of the grain is removed. With this particular Sake the Polishing ratio is as great as 35%, meaning 65% of the rice grain has been milled away. Typically the name is an indicator of the polishing ratio, with Daiginjo exhibiting a higher grade.
Orange Liqueur: To finish I recommend trying one of their many fruity liqueurs. The Orange Liqueur offers a cool and refreshing flavour which pairs perfectly on a hot summer's day. I myself could not leave without first purchasing two bottles.
